Cucumber-Pineapple Gazpacho - Culinary Therapy

Cucumber-Pineapple Gazpacho

Hydrating cucumbers and sweet pineapple are combined in this cold soup invented for summer days.  Enjoy chilled with a side salad or freeze into popsicles for a refreshing summer treat.


3 cups fresh cucumber, chopped
3 cups fresh pineapple, chopped
1/2 avocado
1 tbsp lime juice
1/2 tsp sea salt
2 tbsp extra virgin olive oil
1 handful fresh cilantro, minced

Blend pineapple, cucumber, avocado, lime juice and sea salt in a blender.  
Garnish with olive oil and fresh cilantro.
Serve cold.
