Healthy Peach Cobbler

Peach cobbler is the quintessential summer dessert.  Enjoy this healthy version of a cobbler made with seasonal ripe peaches and fresh, natural ingredients.  Top with banana ice cream for a crowd-pleasing dessert everyone will love.

INGREDIENTS

6 pounds fresh, ripe peaches, pitted and peeled
2 tbsp corn starch
1 cup maple sugar
2 tsp vanilla extract

Topping:
2 cups rolled oats
1/2 cup gluten free flour
1/2 cup dairy-free butter, melted
1/2 cup maple sugar
1/4 tsp sea salt
DIRECTIONS:
Preheat oven to 375 degrees.
In a baking dish, combine peaches, maple sugar, cornstarch and vanilla.  In a separate bowl, combine the dry ingredients for the topping.  Add the butter, using hands to combine the topping into a “crumble”.  Sprinkle the crumble over the top of the pie.
Bake 45 minutes, or until soft and bubbling.
Cool for 15 minutes and serve with banana ice cream.
