Spiced Pears With Chocolate Sauce

Simple, elegant, and healthy, poached pears are a dinner party delight. Poaching infuses the pears with flavor, while the chocolate sauce adds decadence without the use of refined or artificial sweeteners. Gluten and dairy free.

INGREDIENTS:

2 Bartlett or Bosc pears
3 cups water
1/2 tsp vanilla
1 cinnamon stick
1/4 tsp nutmeg
Chocolate Sauce:
2 oz bittersweet (100% dark) chocolate
1/2 cup water
1/3 cup coconut palm sugar
2 tbsp pure maple syrup (Grade B)
2 tbsp raw honey
1/4 tsp sea salt

DIRECTIONS:
First, prepare the pears.  In a small saucepan, add the water, vanilla, cinnamon stick, nutmeg, and pears, peeled.  Bring to a boil, cover partially, and reduce the heat to low.  Simmer for approximately 20-25 minutes, or until the pears are soft (easily sliced with a knife). Careful not to overcook, or your pears will become mushy.  When the pears are done, remove from saucepan and set aside to cool.

To prepare the dark chocolate sauce, add all ingredients to a small saucepan.  Bring to a boil, then reduce heat to low.  Simmer until the sauce thickens slightly, approximately ten minutes.  Remove from heat and let cool.

Drizzle sauce over the pears and serve.
