This recipe is a family favorite, so simple and yet so delicious.
1 cup white canellini beans
1/4 cup fresh parsley, chopped
2 Tbsp olive oil
salt & pepper to taste
Rinse the beans thoroughly. Place them in a medium sized saucepan and cover with water. Let the beans soak overnight.
Discard soaking water, rinse beans, and add enough water to cover the beans plus a few inches. Bring the water to a gentle boil and cook for about 45 minutes, or until the beans are tender. Drain the beans in a colander and pour into a large bowl. Add parsley, olive oil, salt and pepper.
Serve right away or at room temperature.
*For those nights where planning ahead is not an option, substitute with 1 can of canellini beans. Discard liquid, rinse, add remaining ingredients and serve.
Yields 2 -3 servings.
