A New Year’s Day tradition in Italy, lentils are thought to resemble coins bringing good fortune in the New Year. Try this simple recipe with a side salad for good luck on New Year’s day and throughout the year.
Bring the water to a boil in a pot with the remaining ingredients. Allow to soft boil at medium heat for 15-20 minutes. Remove garlic and carrots.
Serve with a drizzle of extra virgin olive oil.
