I love asparagus in the spring! Asparagus is a healthy side vegetable rich in calcium, folate, fiber, vitamin C and vitamin K. Here, a simple roasted version with balsamic vinegar. INGREDIENTS1 pound asparagus, washed with ends cut off1 tbsp olive oil1 tbsp balsamic vinegar sea salt, to taste
Pre-heat oven to 400 degrees.
Line a large baking sheet with parchment paper. Line up asparagus and coat with olive oil and vinegar. Sprinkle with sea salt.
Bake 10-15 minutes, or until tender.
