A fun recipe great for getting kids (and parents!) to eat a rainbow of colors.

red fruit: strawberries, raspberries, or watermelon
orange fruit: oranges or mango
yellow fruit: pineapple or bananas
green fruit: kiwis, honeydew, green grapes, or green apples
blue fruit: blueberries
purple fruit: purple grapes or blackberries
6 inch bamboo skewers
optional:
unsweetened shredded coconut
plain organic yogurt (non-dairy varieties work well also)

Choose one fruit for each color of the rainbow. Wash the fruit and cut into chunks, if necessary. Divide fruit and thread onto the bamboo skewers.
Optional coconut topping: Spread coconut on a flat plate. Roll skewer in yogurt and then in coconut to coat.
