INGREDIENTS:
1 fennel bulb, trimmed
2 oranges, peeled
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
1 tbsp fresh mint leaves
1/4 tsp sea salt
dash of ground pepper
DIRECTIONS:
Half, core and thinly slice the fennel bulb (using a mandarin, if possible). Separate the oranges into segments. Roughly chop the mint leaves.
In a salad bowl, gently toss all of the ingredients together.
